Can you describe what the taste of "freshness" is?

As people know, the “freshness” is derived from protein, which is however not convincing for those keeping fit:
Egg whites are all protein, right? Chicken breasts also contain rich protein, why can't they taste fresh when boiled in water?!
Here’s the reason: Our tongue can only sense the umami "small molecules", such as amino acids (glutamic acid and aspartic acid). They are “locked” in proteins and cannot exert their role without "special treatment".
They are released through fermentation.
After a certain period of time, large pieces of protein are broken down into small pieces of amino acids. The longer the fermentation time, the more diverse the types of amino acids, and the richer the flavor.
The contents of amino acids in soy sauce will reach the peak in the 6th month:
