On the scene of Michelin Guide issue celebration, Shinho joined hands with Mr. Fu Yueliang, the chief cook of 2024 Hangzhou Michelin one-star restaurant Ru Yuan, to interpret Hangzhou Cuisine--"smoked black gold abalones with aroma of distillers grains, matched with sea urchin, hot green pepper and spot shrimp".
The whole dish shows its particular lingering charm after being cooked by ancient method of dried distillers grain. In addition, it interprets the gentle and tenacious style of Hangzhou Cuisine. It can be called a delicacy with combination of traditional and modern cooking skills.
Black gold abalones which have fully absorbed aroma of distillers grains are integrated with fruit tree smoking to make them richly flavored. Mixing with spot shrimps soaked in secretly-made pickle sauce made of WEI DA MEI Hot & Sour Sauce and other ingredients, the compound fresh, sour, salt and spicy flavor is just right.
