Visit to Michelin | Explore the Beijing-styled snacks powered by "Shinho"

From the exquisite and grand imperial cuisine to the unique local flavor of folk snacks, these foods seemingly interpret the story of this city.
This year the Michelin Guide joins hands with Shinho again to explore the modern interpretation of Beijing cuisine culture. Both parties bring each participant with a taste feast with innovative designs and exquisite cooking skills. In the 2025 Michelin Guide release ceremony in Beijing, Shinho launched an innovative cuisine --- “The Braised Pepper Lobster with Scallion” together with Luo Qilong, the chief chef of Yong, the 2024 Guangzhou Michelin Guide 1-star restaurant.
The cuisine combines the classic elements of Beijing roasted duck with modern cooking skills. It is a masterpiece combined the Chinese and western elements with a unique flavor. Both the dough and scallions are treated specially and they are perfectly matched with the lobster. In particular, the Kung Pao lobster paste with scallion at the bottom makes the dish more special. The roasted scallions are mellow and fragrant.
The dish is seasoned with tasty shrimp sauce, a little chicken soup, cooking wine as well as WEI DA MEI virgin original light soy sauce and WEI DA MEI rice vinegar, contributing to its richer flavor.
