Chinese tradition philosophy believes that 'Radishes in the winter and gingers in the summer keep the doctor away'. Gingers are rich in nutrients and considered to be comparable to ginseng. This infused vinegar drink is particularly suited for people with cold energy in their stomach or whole body.

Method

Prepare the ingredients needed to make tender ginger infused vinegar.

Clean, peel and dry the tender gingers before cutting them into slices and placing in an air-tight jar.

Add a layer of yellow crystal sugar.

Fill to the brim with XI GUAN CU Rice Vinegar.
Tips
Store for 10 days before it is ready. Take 20mL daily and dilute with 10 times more warm water to drink. Pickled tender ginger can be eaten with congee. Eat 4 to 5 slices of ginger for breakfast is also beneficial for health.
