XI GUAN Pitaya-Infused Vinegar Drink

Pitaya is an excellent source of plant protein, anthocyanin, vitamins and water-soluble dietary fibre. Red-hearted pitayas are even more nutritious than normal pitayas; they also bring vibrant colour to the vinegar drink.

Method

Prepare the ingredients needed to make pitaya infused vinegar.

Halve red heart pitaya and remove all of the fruits including the pink inner layer skin that is rich in anthocyanin. Cut the pitaya into chunks.

Add a layer of yellow crystal sugar.

Fill to the brim with XI GUAN CU Rice Vinegar.
