Spare Ribs in a Sweet and Sour Sauce

This is one of the most popular dishes of Chinese cuisine. Fresh spare ribs are lovingly coated in a sweet and sour sauce which exudes a glossy red shine.

Method

Cut loin ribs into small pieces, marinate in WEI DA MEI Premium Soy Sauce before deep-frying the ribs.

Add some oil and chopped spring onion in a pan to stir fry; add deep-fried loin ribs, 50g of WEI DA MEI Crystal Sugar Dark Soy Sauce, 50g of WEI DA MEI Premium Soy Sauce, 10g of sugar and 20g of cooking wine with some boiling water. Bring content to boil before turning down the heat to slow cook for a further 20 minutes; add 50 grams of XI GUAN CU Rice Vinegar at the end of cooking but before reducing the sauce. Ready to serve.
