Stir-fried Prawns

Method

Wash and dry the prawns before marinating them in salt, cornstarch and egg white.

Heat up 300 grams of oil to 90 degrees, add the prawns to cook.

Heat up a drizzle of oil in a pan with 20 grams of water diluted cornstarch and the prawns to stir-fry. Serve with a small bowl of XI GUAN CU Rice Vinegar as a dipping sauce on the side.
