'Golden Nugget' Dumplings

In China, dumplings are often served during the Spring Festival. Their Chinese pronunciation is similar to that of 'the change of seasons', they are also shaped like golden nuggets, makings dumplings the perfect food to celebrate the coming of a new year.

Method

Marinate the mince with WEI DA MEI Premium Soy Sauce, WEI DA MEI Premium Oyster Sauce, spring onions, ginger, salt and egg.

Deshell and devein prawns; marinate prawns with white peppers, egg and some WEI DA MEI Premium Cooking Wine. Mix the mince with prawns to make a filling. Make sure to stir in one direction. Add some water and garlic chives in the filling as well.

After the filling is carefully, gently wrapped up into dumplings, prepare a pot of boiling water. Add dumplings in while slowly stir the water in one direction using a spatula. Cover the pot and allow the content to boil before adding a bowl of cold water to calm bubbling dumplings; repeat this process twice and dumplings are cooked. Add a little salt in the water to prevent dumplings from sticking to each other.
