Softshell Turtle in a Crystal Sugar Sauce

Method

Prepare the soft-shelled turtle and cut it into chunky pieces.

Heat up some oil in a pan and add spring onions, ginger, garlics, soft-shelled turtle and WEI DA MEI Premium Cooking Wine to stir fry for a minute before adding the bamboo shoots, 50 grams of WEI DA MEI Crystal Sugar Dark Soy Sauce, 30 grams of LIU YUE XIAN Premium Soy Sauce, 15 grams of sugar and some boiling water. Bring the content to boil before turning down the heat to slow cook for 30 mins, reduce the sauce to a creamy thickness. Ready to serve.
